I don't listen to the original (I listen to GNT's version on Spotify), but I wouldn't have ever heard "Helplessly Hoping" if it wasn't for them.

There haven't been too many songs in the past few seasons (besides a lot of the country ones) that I wasn't at least somewhat familiar with and enjoyed the original of, but here's what I came up with:

 

Inseparable - Natalie Cole (Jershika nailed this and made it her own but the original is so wonderful to have on in the background as well)

Woman - Doja Cat (Libianca actually convinced me to finally give Doja a try and I love it)

pov - Ariana Grande (I didn't know this before Ryleigh/Gean as it was before it big on the radio and it became one of the bigger hits of the year)

exile - Taylor Swift/Bon Iver (yes it got montaged, but having never heard it before I loved hearing Bon Iver on the track and it's stuck with me since)

Drinkin' Problem - Midland (I didn't particularly love Carter's version but man if all male country songs were like this it'd be much more tolerable)

Cover Me Up - Jason Isbell (Damn, Jake. I should've been angrier with him winning over Ricky, Katie, and Rose but this was so damn solid)

My My My - Troye Sivan (Mari's performance had issues but the beat was pretty damn catchy. Haven't heard this in a minute but I view the song positively)

Hurt Somebody - Noah Kahan (Claire's audition was okay but I still enjoy this song when it comes on shuffle)

Space Cowboy - Kacey Musgraves (I didn't pay attention to Kacey besides Follow Your Arrow before this. Golden Hour became one of my favorite records of the year after Chevel's performance)

Kozmic Blues - Janis Joplin (god am I still pissed we didn't hear this whole performance from Katrina. Hadn't heard the original, listened to it, love it now)

Both Sides Now - Joni Mitchell (Ashamed to say I'd never listened to this until Addison. So much time wasted. One of the most gorgeous songs I've ever heard.)

Every Little Bit Hurts - Brenda Holloway (Lilli/Lauryn's battle was so underrated. Both did excellent. Also love the original and laughed when I heard it in Baby Driver.)

Drown In My Own Tears - Ray Charles (Sa'Rayah took me to church)

I Hold On - Dierks Bentley (Completely far out of anything I listen to usually, but Angie inspired me to go the original and what the hell, I unironically love this song.)

Lilac Wine - (In looking for Emily's video, I found Nina Simone's version too and DAMN. Probably even more fascinating than Buckley)

We Don't Have to Take Our Clothes Off - Ella Eyre version (Pretty sure I didn't know the original either, but Ellie's audition remains one of the all time best.)

Strawberry Wine - Deana Carter (it's been covered a few times since, but Summer introduced me to this one and I love it)

Even If It Breaks Your Heart - Eli Young Band (Morgan Frazier got me with this one. Solid song that I rarely skip on shuffle)

Say You Love Me - Jessie Ware (Jeffery's version)

Something In the Water - Carrie Underwood (Celeste's version wasn't perfect, nor is off-Christian music my thing, but she did introduce me to this Carrie track)

She's Got You - Patsy Cline (I didn't care for Emily Ann's version, but it did direct me to the stunning original. Jewel's version on TMS is muuuuuch better thankfully!)

Burning House - Cam (Perhaps I'm giving Emily Ann too much credit but yeah, this slaps.)

Barton Hollow - The Civil Wars (I actually didn't like Alaska and Madi's blind at all lol. Such a good original though!)

We're Going to Be Friends - The White Stripes (Damn season 5 REALLY had some good picks that we just can't get anymore. Caroline's was lovely.)

I've discovered The Civil Wars' music recently and I love it (especially the first album), so I'm scared to hear whatever they did to that song.

 

edit: well, it wasn't TERRIBLE but it definitely pales in comparison to the original. mediocre rendition.

Its a hard song. Adam sabotaged Chance Peña with it when he returned as a comeback in the S9 playoffs, and even though he has a deep tone and gave it his all, it was still too big for him.

 

And yes, that first album is phenomenal. Its a shame they are no longer a thing.
